Paul KuckPrincipal Paul Kuck is the owner of Sustainable Foodservice Consulting, an independent firm specializing in foodservice sustainability. He has over seventeen years of experience in the foodservice industry, working in various positions from dishwasher to general manager of a multi-unit company. Kuck has been directly involved in developing restaurant concepts, menus, recycling and composting programs, energy and water audits, energy efficiency upgrades for lighting systems, HVAC systems, refrigeration systems, and commercial kitchen equipment, energy efficiency tax credits and several restaurant construction projects. Kuck is an Allied Technical Assistance Contractor (ATAC) with the Energy Trust of Oregon, and works with various companies in the Northwest including Ecos Consulting, Oakshire Brewing, Krispy Kreme, and Noodles & Company. Kuck owns and maintains a website and blog that offers information, resources and web links to owners and operators interested in greening their foodservice operations. |
